Grilled Cheese with Spinach and Goat Cheddar

Grilled Cheese with Spinach and Goat Cheddar is a savory, elevated twist on the classic sandwich. Made with sautéed garlic spinach, tender deli chicken, and melty Bella Capra Raw Milk Goat Cheddar, all toasted between buttery slices of bread using our rich Goat Butter, it’s a simple yet satisfying lunch or light dinner.

Ingredients

1 tablespoon olive oil
1 clove garlic, minced
3 cups fresh baby spinach
4 slices of bread
2 tablespoons Bella Capra Goat Butter
4 ounces sliced deli chicken
3 ounces Bella Capra Raw Milk Goat Cheddar, shredded

Directions

  1. Heat olive oil and add the minced garlic. Cook until the garlic is fragrant and beginning to brown, then stir in a splash of water. Cover and cook over low until the greens are mostly wilted. Wipeout the pan and return to the heat.
  2. Take the slices of bread and butter one side of each. Place two slices, butter-side down, in the pan. Place a layer of cheese on each slice followed by chicken, spinach, another layer of cheese, and the final slice of bread, butter-side out.
  3. Cook the sandwiches over medium-low heat, flipping once or twice, until the bread is toasted and the cheese is melted. Slice in half and serve.
