Bella Capra Truffle Mac

Rich, creamy, and full of flavor—this Truffle Mac brings together Bella Capra Truffle Goat Cheddar and Goat Mozzarella, melted into a velvety sauce over cavatappi pasta. Finished with a buttery panko topping and a hint of black pepper, it’s comfort food with a gourmet twist.

Ingredients

6oz. Bella Capra Truffle Goat Cheddar

6oz. Bella Capra Goat Mozzarella

1 lb. Cavatappi pasta

4 tablespoons salted butter

2 1/2 cups heavy whipping cream

1/2 cup all-purpose flour

1 cup panko bread crumbs

1/2 teaspoon black pepper

Directions

  1. Preheat oven to 359 degrees Fahrenheit
  2. Bring 4-6 quarts of water to a boil in a large pot.
  3. Add the pasta and boil up to 8 minutes until tender.
  4. Strain the pasta and add back to the pot.  Cover.
  5. Shred the Bella Capra cheeses and set aside.
  6. Melt the butter in a large saucepan on low to medium heat.
  7. Whisk in the flour until smooth paste forms.
  8. Whisk in the cream and pepper then slowly add one handful of cheese at a time until sauce is slightly thick.
  9. Pour the pasta into a 9x13 inch baking dish.
  10. Scrape half the cheese sauce into the pasta and fold.  Add the remaining sauce evenly over the top.
  11. Bake 20 minutes leaving 2 minutes to brown the breadcrumbs over the top just before done.
