Ingredients

Marinated Feta:
8oz Bella Capra Goat Feta
1 cup Extra Virgin Olive Oil
4 cloves whole garlic
4 sage leaves
6 stems thyme
2 stems rosemary
2 basil leaves
1/2 tablespoon peppercorn
2 red hot chile peppers

Melon, Peach, and Cucumber Salad:

1/2 large chilled seedless watermelon
2 sliced ripe peaches
1/2 English cucumber cut into rectangular chunks
2 tablespoons sliced fresh mint
1 whole thinly sliced jalapeno

Directions

Marinated Feta

  1. Place herbs, peppercorns, chile peppers, and garlic into small tub or mason jar. Add feta pieces and olive oil. Fill to top and seal with lid. Let marinate overnight.

Melon, Peach, and Cucumber Salad

  1. Using a melon baller, scoop melon balls into bowl or platter. Add peaches, cucumbers, and marinated feta with the oil. Finish with sliced mint and jalapeno.
