Street Style Corn Ribs with Avocado Yogurt Dressing

Here is SNCC’s version of elote, Mexican-style street corn!
1 cup Bella Capra Goat Feta
4 corn cobs
1/2 cup diced radish
1/4 cup diced red onion
1/4 cup chopped cilantro
1/4 cup sliced green onion
4 tablespoons tajin seasoning
3 tablespoons olive oil
Avocado Yogurt Dressing
2 cups Graziers Cream on Top Whole Milk Plain Yogurt
1 tablespoon lime juice
2 garlic cloves
1/2 tablespoon sea salt
Preheat oven 450 degrees Fahrenheit.
Cut corn into quarters lengthwise. Be careful while doing this! Use a sharp knife and make sure your fingers are out of the way.
Toss the corn with olive oil, sprinkle tajin seasoning and continue to toss until coated well.
Place on baking sheet and cook for 15 minutes until corn is slightly charred.
Plate while still hot and drizzle avocado yogurt dressing over the corn.
Top with diced radish, red onion, green onion, squeezed lime juice, and crumbled Bella Capra Goat Feta.
