Spring Roll Salad with Chèvre

Cook time- 5 minutes
Total time-25 minutes

Serves 4

8 ounces fresh Bella Capra Chèvre
1 package rice vermicelli noodles
1 red bell pepper
1 large carrot
1 purple cabbage
1 cup cilantro
1/2 cup roasted and salted peanuts
1 cup sweet chili sauce


  1. Boil noodles for 5 minutes until soft and tender. Set aside to cool for 10 minutes.
  2. Thinly julienne slice purple cabbage ,red bell pepper, and carrot.
  3. Toss with noodles and top with fresh chèvre, peanuts, and cilantro.
  4. Finish with sweet chili sauce.

Add sliced jalapeños for a spicy bite, shredded rotisserie chicken, or cooked shrimp.
