Grilled Cheese with Spinach and Goat Cheddar

Yields: 2 sandwiches
Prep time: 10 minutes
Cook time: 15 minutes

1 tablespoon olive oil
1 clove garlic, minced
3 cups fresh baby spinach
4 slices of bread
2 tablespoons Bella Capra Goat Butter
4 ounces sliced deli chicken
3 ounces Bella Capra Raw Milk Goat Cheddar, shredded


Heat olive oil and add the minced garlic. Cook until the garlic is fragrant and beginning to brown, then stir in a splash of water. Cover and cook over low until the greens are mostly wilted. Wipeout the pan and return to the heat.

Take the slices of bread and butter one side of each. Place two slices, butter-side down, in the pan. Place a layer of cheese on each slice followed by chicken, spinach, another layer of cheese, and the final slice of bread, butter-side out.

Cook the sandwiches over medium-low heat, flipping once or twice, until the bread is toasted and the cheese is melted. Slice in half and serve.
