Pimento Goat Cheese Spread
8 oz Capra Bianca Aged Goat Cheddar
8 oz Bella Capra Chèvre
1/4 cup diced and drained pimentos
3 tablespoons mayonnaise
2 cloves diced garlic
2 tablespoons diced yellow onion
1/2 teaspoon sea salt
1/4 teaspoon crushed black pepper
Soften Bella Capra Chevre by letting it sit out for 20 minutes before mixing. Shred the Capra Bianca into a large mixing bowl. Fold in remaining ingredients with a wooden spoon until creamy.
Serve with pretzel buns or just smear onto your favorite cracker.
