Creamy Avocado and Cucumber Gazpacho

Serves 2

1/2 cup Gina Marie Farmer Cheese (reserve 1 tablespoon for garnish)
1 large ripe avocado
3/4 cup peeled English cucumber
2 cloves garlic
6 green grapes
2 tablespoons red wine vinegar
1/2 cup chilled water
1/2 cup olive oil
1 teaspoon olive oil for garnish
Salt and pepper to taste

Blend Farmer Cheese with 1/2 cup olive oil until smooth. Add in avocado, cucumber, one clove of garlic, and red wine vinegar. Continue to blend until creamy. Garnish with
tomatoes, grapes, additional Farmer Cheese, sliced garlic, and salt and pepper.  Drizzle with olive oil.
