Classic Potato Latkes

2 medium golden or russet potatoes
1/4 cup diced yellow onion
3 oz package thickly sliced smoked salmon
1 large egg
2 tablespoons matzo meal or all-purpose flour
Sierra Nevada Farmhouse Organic Crème Fraîche
1 tablespoon kosher salt
1/8 teaspoon crushed black pepper
Fresh dill sprigs

Heat oil in a skillet.

Shred potatoes and onion. Mix by hand with matzo meal, egg, salt, and pepper. Form into patties and fry until deep golden brown — five minutes on each side. Serve with a dollop of crème fraîche, smoked salmon, dill, salt, and pepper.
