Boxty and Bangers with Guinness Mushroom Gravy

Boxty Ingredients

8oz Bella Capra Goat Mozzarella

1 cup all-purpose flour

3 cups shredded potato

2 large eggs

1/2 cup cooked bacon

1 tablespoon diced chives

1/2 tablespoon garlic powder

1 teaspoon salt

1 teaspoons crushed black pepper

2 tablespoons Graziers Salted Butter

Guinness Mushroom Gravy with Bangers

1 cup sliced brown mushrooms

1 cup Guinness

1 1/2 cups beef broth

2 tablespoons Graziers Salted Butter

3 tablespoons all-purpose flour

2 banger links or bratwurst


To make the boxty, start by scrambling two eggs in a large bowl. Shred in the mozzarella then add the flour, shredded potato, salt, pepper, chives, bacon, and garlic powder. 

Form the boxty into 5 balls then smash them into pancakes.  

Heat 2 tablespoons of butter in a large skillet and fry the boxty on medium to high heat until golden brown and crispy.  


Slice the bangers and heat in sauce pan until lightly brown.


Prepare the gravy by heating 2 tablespoons of butter to a medium sauce pan then whisk in the flour until smooth. Whisk in the Guinness, continually mixing. Stir in the beef broth and turn to low heat. Sauce will thicken.

Add the bangers to the gravy and serve with boxty.
