Bella Capra Baked Acorn Squash

2 cups shredded Bella Capra Semi Soft Traditional Goat Cheese wedge
1 whole acorn squash
1 slice whole wheat bread
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon nutmeg

Preheat oven to 400 degrees Fahrenheit.

Cut bread into 1/4 inch cubes. In a large mixing bowl, toss with 1 cup of olive oil. Bake for 5 minutes until slightly crispy. Set aside.

Cut acorn squash in half and brush with remaining olive oil and sprinkle with salt, pepper, and nutmeg. Bake for 55 minutes. Squash should be golden brown. Stuff squash with toasted bread cubes and top with shredded Bella Capra cheese. Finish baking for the last 5 minutes until cheese is browned and deliciously gooey.
