Baked Avocado Egg

Ingredients
1/2 cup shredded Sierra Nevada Organic Smokehouse Jack
2 avocados
4 medium eggs
5 oz diced pancetta
1 tablespoon diced green onion
1 tablespoon sliced red onion
Sprinkle of salt and pepper
Instructions
Cook pancetta in a medium size frying pan until brown and crispy. Set aside on a paper towel lined plate.
Preheat oven to 425 degrees Fahrenheit.
Cut the avocados in half and remove the pit.
Slice off a thin layer on each bottom of avocado. This will help keep it flat while baking. Use a spoon to cut out a larger round where the seed was, making sure not to penetrate through the bottom. Place the avocado on a parchment lined baking sheet. Crack each egg into the hollowed out hole and bake for 15 minutes until eggs are cooked but the yolks are slightly runny. Immediately add the shredded smokehouse jack on top of each avocado to melt while still hot. Sprinkle with fried pancetta ,onions, salt, and pepper.
